Bright, fruit forward aromatics reminiscent of baked apples, pears, raisins and cream and a fine mineral finish has been achieved through harvesting at sunrise, gentle pressing and fermentation at cool temperatures. 10% aged in seasonal French barrels and then kept on fine lees for 4 months producing a wine of bright straw colour and intricate texture.
