. The name “Saperavi” translates to “dye” or “colour” in Georgian, a fitting title given its inky, almost black hue. This teinturier grape (meaning its flesh as well as its skin is red) is one of the few that can produce naturally dark wines without needing blending.
Saperavi wines are typically full-bodied, with high acidity and a strong tannic structure, making them ideal for aging. The flavour profile often includes intense notes of dark fruits like blackberries, black cherries, and plums, with hints of spice, licorice, and sometimes a touch of smoky earthiness. As these wines age, they develop more complex flavours, often showing nuances of leather, tobacco, and savoury herbs.
Saperavi is versatile and can be made into a range of styles, from dry to semi-sweet, and even dessert wines. However, it’s most celebrated for producing bold, dry red wines that can stand up to hearty dishes. Its natural acidity and tannins make it a perfect match for grilled meats, game, and aged cheeses.
In recent years, Saperavi has garnered international attention, not just as a Georgian staple but as a grape with global potential. Its unique characteristics and ancient lineage make it a must-try for any serious wine enthusiast.
